2 cups Earnest Eats Mayan Blend Hot Cereal
1 teaspoon baking powder
2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
1/4 teaspoon salt
7 1/2 ounces pumpkin puree
1 egg
1/4 cup maple syrup (honey works too)
2 teaspoons pure vanilla extract
1 cup unsweetened vanilla almond coconut milk (or any other milk)
1/3 cup chopped pecans
1/3 cup mini chocolate chips
1/4 cup dried organic cranberries


Step 1

Preheat oven to 350 degrees

Step 2

Spray muffin pan with non-stick spray

Step 3

In a large bowl, stir together hot cereal, baking powder, spices and salt

Step 4

In a separate bowl, mix pumpkin, egg, maple syrup, vanilla, milk and goodies

Step 5

Add pumpkin mixture to the oats and stir to incorporate

Step 6

Allow the mixture to set and thicken for about 5 minutes before spooning into your muffin pan

Step 7

The muffins will not rise much, so fill the muffin cups to the top

Step 8

Bake for 30-35 minutes and until the center of each oatmeal muffin is set

Step 9

Allow to cool for 15 minutes before serving. Because there is no flour, you really do need to let them cool completely for them to set up.

Store in an airtight container in the fridge
