1 cup Earnest Eats Blueberry Chia Hot & Fit Cereal
1 1/2 cup almond flour
2 tablespoons baking powder
1 tablespoon salt
2 eggs (1 full egg + 1 egg white)
1 cup unsweetened almond milk
2 tablespoons melted coconut oil (or your favorite oil)
1 teaspoon vanilla
1 teaspoon lemon juice
handful blueberries
maple syrup to taste


Step 1

Place oatmeal into a blender/nutri-bullet to make into a coarse flour

Step 2

Then place the oatmeal flour + all dry ingredients into the bowl, by sifting through the almond flour, baking powder and salt

Step 3

Whisk egg + egg white together in a bowl then add to dry ingredients with the rest of the wet ingredients

Step 4

Fold in the blueberries

Step 5

Spray your pan/griddle

Step 6

Take 1/4 cup scoopful to place pancake batter on the griddle (Make sure you get some blueberries in there!)

Step 7

Cook until the bottoms are slightly brown (1-2 minutes depending on how hot your griddle can get), then flip

Step 8

Top with maple syrup & enjoy!
