2 cups Earnest Eats American Blend Hot & Fit Cereal
2 1/2 teaspoons gound cinnamon
1 teaspoon baking powder
a couple pinches of salt
1 1/2 cups unsweetened almond milk
1 egg
1 1/2 teaspoons vanilla extract
2 persimmons (peeled and chopped)
1 banana (chopped)
2 1/2 tablespoons coconut oil


Step 1

Preheat oven to 375°F and grease 8×8 baking dish

Step 2

Place first 4 ingredients into a mixing bowl and toss together

Step 3

In another mixing bowl whisk together almond milk, egg, vanilla and oil

Step 4

Pour the wet ingredients over the oat mixture and stir together

Step 5

Fold in the persimmon and banana until combined

Step 6

Pour mixture into the prepared dish and smooth surface with a spatula

Step 7

Bake for 40-45 minutes
