For someone like me who is constantly on the run, I love the ease and simplicity of overnight oats. In fact, I’m all about them! All you have to do is throw some ingredients together and toss in the fridge overnight. How much easier does it get, folks? This is one of my favorite overnight oats recipes because not only do you get to enjoy a dessert-like oatmeal for breakfast, but you get some veggies too!



1 grab and go cup (or ½ cup from bag) Earnest Eats American Blend Hot Cereal
1/2 to 1 cup almond milk
1/4 cup grated carrot
1/2 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
1 dollop coconut yogurt (or yogurt of your choice)
1 tablespoon chia seeds
1/4 cup chopped pecans
2 tablespoons shredded coconut


Step 1

Fill cup with milk according to the directions on the package

Step 2

Mix in carrots, spices, vanilla extract and chia seeds

Step 3

Let sit overnight

Step 4

In the morning, top with pecans and coconut

Step 5

You can choose to eat this cold, or zap in the microwave for 60 seconds if you prefer it warm
