We’ve all heard of the Starbucks Unicorn Frappuccino hyped up with all the bells and whistles. From fairy-like colors to magical fairy dust and a cool 410 calories, who could forget this whimsical creature? We’ve put a healthier spin on this buzz worthy craze and created our own unicorn overnight oats… without all of the added sugar. Here are 5 steps to create this beautiful goodness that the whole family can enjoy.
1. Gather your ingredients
You will need:
• 2 cups Earnest Eats Blueberry Chia Oatmeal (click here or find us at HEB!)
• 2 cups of your favorite milk or milk alternative
• 4 small containers with lids
• Sweetener of your choice (optional)
• 1 mango
• 1 beet
• 1 T maqui berry powder
• 1 T spirulina powder
• 1 mason jar
• 1 T shredded coconut
• 10 blueberries
2. Time to make some oats!
Place 1/2 cup of Earnest Eats oats in each of the 4 containers. Pour 1/2 cup of your milk or milk alternative in each of the 4 containers to cover the oats. Add sweetener of your choice if you would like depending on your sweetness preference. Place all 4 containers in the fridge overnight.
3. Make your own food coloring
In the morning you will need to make your own red and yellow food coloring. For the red coloring place 1 peeled and cubed beet in 2 cups water. Boil until only a few teaspoons of liquid remains. Place aside. For the yellow coloring, peel and pit 1 ripe mango. Puree in a food processor and set aside.
4. Coloring the oats
Take your containers out from the fridge. In container 1 add the mango puree. Stir and set aside. In container 2 add 1 Tablespoon of the beet juice. Stir and set aside. In container 3 add 1 Tablespoon maqui berry powder. Stir and set aside. In container 4 add 1 Tablespoon spirulina powder. Stir a set aside.
5. Unicorn oats time!
In your mason jar start layering the oatmeal starting with container 1. Once you’ve reached the top, add your blueberries and sprinkle with coconut. Now you can start taking pictures of your beautiful creation!
