Ingredients

2 cups Earnest Eats Hot & Fit Cereal American Blend
2 cup cooked quinoa
1 cup cooked farro
3 tablespoons extra virgin olive oil
4 ribs celery, chopped
1 yellow onion, minced
3 shallots, minced
1 clove garlic, minced
4 cups fresh mushrooms (combination of any- portobello, shiitake, crimini, button, etc.), chopped
1/4 cup Italian fresh parsley
2 tablespoons fresh rosemary
2 tablespoons fresh thyme
3 tablespoons fresh sage
1 cup dried cranberries
salt and pepper to taste
3 cups un-chicken broth (or chicken or veggie broth)
drizzle extra virgin olive oil

Directions

Step 1

Heat oven to 350 degrees

Step 2

Toast hazelnuts in stainless steel pan on high heat, constantly stirring. Don’t walk away, because they can burn quickly then set aside to cool

Step 3

Add Earnest Eats Hot & Fit American Blend cereal to large mixing bowl

Step 4

Add quinoa and farro to the hot cereal in the bowl

Step 5

Sautee celery, onion, shallots, mushrooms and garlic in olive oil until tender

Step 6

Add to hot cereal and grain mixture in bowl

Step 7

Sautee mushrooms and garlic in 2 Tablespoons of olive oil

Step 8

Add to ingredients in bowl

Step 9

Add hazelnuts, cranberries, parsley, rosemary, sage and thyme to bowl

Step 10

Season with salt and pepper to taste, and mix well

Step 11

Add broth and stir

Step 12

Drizzle with olive oil and spoon mixture into glass baking dishes

Step 13

Cover with foil and bake for 30 minutes

Step 14

Remove foil and bake another 10-20 minutes depending on how crispy you like the top of your stuffing
